How to properly perform database maintenance on a live website

I’m using WordPress to host a website, and for years, I’ve been using plugins to perform maintenance (delete revisions, expired transits, optimizing table, etc.) on the msyqls database, but I’ve been doing it while the site was live. So, I would like to know if it’s OK to perform database maintenance while the site is live, or what’s the standard procedure?
