ZFS setup, adding drives on the go

I am not very knowledgeable when its comes to ZFS or drive pools.
I am currently running an Ubuntu server with 5 different ext4 drives. 1x 128gb SSD for the OS, 1x 10tb 80% used, 1x 8tb 80% used and 2x 2tb running in raid0 85% used. I just got two additional 10tb drives.
I would like to hopefully switch to a ZFS raidz1 setup while not losing the data?
I was imagining I would create the pool starting with the two empty drives with 1 of them being the parity drive. Then moving the data over 1 drive at the time, I would eventually add the 10tb drive then the 8tb drive (don’t need the 2x2tb anymore).
Is this possible or is there a solution in achieving a similar setup?
